L'esturgeon est un animal benthique. En eau douce, eau saumâtre et eau de mer. Il aime les sols meubles aux fonds graveleux et caillouteux.

L'esturgeon européen est un poisson longiligne. Il mesure entre 1 et 3 mètres de long et pèse entre 200 et 300 kilogrammes. Ces chiffres de taille et de poids peuvent être supérieurs mais rarement.
De couleur gris cendré à bleu gris, la partie ventrale est plus claire.
La tête est triangulaire, le nez ou museau est pointu, la bouche est placée sur la partie inférieure et est munie de quatre barbillons tactiles.
La nageoire caudale est asymétrique, la partie supérieure étant plus longue.
La dorsale est très postérieure et débute à la hauteur de la nageoire anale.
